Enchilladas!


Easy Peasy! Last night, Josh asked, "Babe, why don't you make these ever? They are SO good!" YESSSSS!!!

You need:
Flour tortillas
Hamburger or chicken or no meat at all
Shredded cheese
Tomato sauce or paste
Enchillada mix

I use hamburger. I browned the hamburger, drained it and then mixed it with lots of shredded cheese. I used a quart of homemade tomato sauce, mixed it with one packet of enchillada mix and let it simmer for a few minutes while I browned and drained my meat. I got a 9 x 13 dish. I spread some of my sauce in the bottom of the pan. I took my meat/cheese mixture and filled up flour tortillas. I put those in the pan all rolled up pretty. I then poured the rest of the sauce over the top, with more shredded cheese. I covered the pan with foil. Pre-heated the oven to 350 degrees and cooked them for 20 minutes. Done and done! A little sour cream on top and the monsters ate them right up!

French Dip Sandwiches


Last night, we had french dip sandwiches. I put the roast in the crock pot all day, just with water. Next time, I will definitely put the au jus mix in with the water. The roast needed a little more flavor. We piled the roast on the hoagie buns, but you really could use hamburger buns or even just toast some thick bread... we added swiss cheese and dug in! The kids ate them better than I thought they would. Easiest meal EVER!

Chocolate Chip Cookies


My favorite chocolate chip cookies come from the Western Family bag of Real Chocolate Milk Chocolate Chips. Mmmmmmm Yummy!!!

Use the exact recipe on that bag with the entire bag of chocolate chips. It says to cook them for 10-15 minutes... I bake them for 8 1/2 - 9 minutes, then I move them from the cookie sheet right away. It says it makes about 3 dozen... we've never gotten more than 2 dozen because we eat the dough like crazy!!!

Creamy Asparagus Soup


You need:
1 onion, chopped
2 T butter
1 lb. fresh aspargus, chopped
1 cup vegetable broth
1 dash garlic powder
1 dash pepper
1 cup milk

Microwave onion and butter on high for 2 minutes. Add asparagus, vegetable broth, garlic powder and pepper. Microwave, covered, on high for 10-12 minutes. Puree in blender. Return mixture to microwave safe dish, stir in milk, microwave until heated through.

Yummy!
